1. Cauliflower Potato Soup

Ingredients ->

  • 3 large potatoes peeled and diced
  • 11/2 cup chicken broth
  • 3 cups chopped cauliflower
  • square-o
    6 crushed garlic cloves
  • square-o
    Salt
  • square-o
    white pepper
  • square-o
    dried thyme

Directions ->


  1. Add cauliflower, diced potatoes, fat free chicken broth and water to cover in a large pot, bring to boil as you stir occasionally.
  2. Turn the heat to medium and add salt, garlic and thyme. Stir and let it cook for 30-40 minutes.
  3. Turn off the heat and let it cool for 5 minutes. Once cool enough to handle, mash in a blender or using a potato masher till pureed. 
  4. Let the puree simmer to the consistency of your liking and adjust seasoning.


2. Hot Peanut Soup


Ingredients ->

  • 500g peanut butter
  • 1L sour milk
  • 500ml fresh milk
  • square-o
    Salt

Directions ->


  1. Mix peanut butter and sour milk in a medium size pot with clean hands until you get a smooth consistency.
  2. Bring the mixture to simmer on medium heat stirring occasionally for 20-30 minutes.
  3. Season to your taste Add fresh milk to lighten the soup and stir.
  4. The soup is ready when there is a thin layer of peanut oil at the top.


3. Fish Soup


Ingredients ->

  • 2 large onions finely chopped
  • 5 medium tomatoes finely chopped
  • 2 garlic cloves crushed

    200ml organic fish stock
  • square-o
    500ml fresh milk
  • square-o
    5 tablespoons olive oil
  • square-o
    1 large capsicum chopped
  • square-o
    A handful of fresh coriander chopped

  1. Heat 3 tablespoons of olive oil in a large pan; shallow fry roughly chopped salmon fillet to golden brown on both sides and set aside.
  2. Heat the remaining olive oil in the pan and add chopped onions. Stir for a minute, add the crushed garlic and saute.
  3. Add chopped tomatoes, stir until all the tomatoes are broken to a smooth taste.
  4. Add fish stock and milk and cover and simmer for 25 minutes. Season and give a quick stir.
  5. Add the fried salmon to the pan cover and simmer for 6 minutes.
  6. The soup should be thick and creamy. Turn of the heat, add capsicum and coriander stir and cover for two minutes.


4. Cheddar Cheese Soup


Ingredients ->

  • 1 cup chopped cauliflower
  • 1 cup broccoli 
  • 1 onion chopped
  • square-o
    450g bacon
  • square-o
    500ml fresh milk
  • square-o
    900g cheddar cheese

Directions ->


  1. Add cauliflower, onions and 2 cups of water in a pot, cover and simmer over medium heat.
  2. Microwave bacon and broccoli as the cauliflower cooks and then chop up the bacon.
  3. Add milk, cheddar cheese and more water to the cooked cauliflower.
  4. Cook until cheese melts; add broccoli and bacon and season to taste Thin down with milk if it sets. 


5. Noodle Soup


Ingredients ->

  • 1kg noodles
  • 2 cans cream of chicken soup
  • 1 tablespoon cumin
  • square-o
    1 tablespoon turmeric
  • square-o
    2 large potatoes peeled and chopped
  • square-o
    1 onion chopped
  • square-o
    10 cups of water
  • square-o
    Salt to taste

Directions ->


  1. Bring water to boil in a large pot.
  2. Gently add noodles and then potatoes and onions about 3 minutes later.
  3. Cook until done.
  4. Once done, add cream of chicken soup, cumin turmeric and season to taste.  


6. One Pot Taco Soup


Ingredients ->

  • 2 table spoons olive oil
  • 3 finely chopped tomatoes
  • 1 finely chopped onion
  • square-o
    200g minced meat
  • square-o
    2 can beans
  • square-o
    2 can corn Ranch dressing mix
  • square-o
    Salt to taste

Directions ->


  1. Saute the onions and the meat in heated oil, let the meat cook for 5 minutes.
  2. Add all the other ingredients and cover in water.
  3. Bring to boil and simmer for 35 minutes and season to taste.
